Objectives
- To provide a background in the science and principles of food safety and quality
- To develop existing operational knowledge for implementation in the workplace

- Correct food storage and handling

- Design of food premises and equipment
- Legal requirements and law enforcement

- Food hygiene, hazard analysis and management
Exam
2 hours multiple choice (Other languages/oral papers available)
